• To Prepare: Place rinsed beans in a pot, and cover with 2 inches of water. Then bring to a boil for 10 minutes.

  Remove from heat, soak for 1 hour, and drain.

  Bring 6 sups of water to a boil, add beans, a ham bone (OPTIONAL), cover and simmer for one hour. Add one chopped onion, one chopped celery stalk, two minced garlic cloves and the vegetable packet. 
  Cover and cook for 2 hours more, adding hot water if beans become too thick. 

  If you prefer a smoother soup, puree half the mixture, stir in the meat (if added) and cook until hot. Add salt and pepper to taste. 

  OPTIONAL: Add 1 cup of dry sherry at the end. Ladle soup into bowls and garnish with sour cream and chopped green onions.
